Your knife was made in 1980, so what you have is going on a quarter of a century old. Good start. Also from a now defunct company, another point in making it a collectable.
According to the reference in front of me, Bernard Levine's (he has a forum here in BFC) your knife is what is called a "private edition knife", another word for a kind of commemorative knife, I don't know what company or corporation had Schrade make your knife for them.. Is there a 'Dixie' company somewhere? This is the kind of question that makes collecting both interesting and confusing.
According to Levine's book, there were four sets of two knives each. And the value placed on them was a guess... an estimate by the authors... of $35. Of course if you were to find someone who was missing your knife from his set and he wanted to make it complete, you could probably get more. If the number is stamped on the bolster, it is probably a serial number. Out of how many? We don't know. Schrade did not keep good records on those private editions. So there is yet another question.
If it were most of us here, we'd call it a collectable and enjoy answering all those questions.

Added: I just checked another reference by J. Bruce Voyles, and he mentions one set of two knives; both stag handled, a hunter and a lockback, with 'Dixie Collection' etched on the blades. He states value of $65.
