Me too with one additional left hand dominate thing…. While I carry my knife on the right (pocket or hip) and deploy them with my right hand, I mostly use the knife with my left hand for hard or detailed use. The exception is eating (like you) where I use the knife with my right hand to cut steak. Everything else associated with eating like cutting bread or spreading butter/jelly I’m back to using my left hand with the knife. I’m an odd duck.I write left handed and eat left handed but everything else is all right handed. So there that to through into the equation.
Another left handed friendly brand is Benchmade, my Mini Bugout is remarkably easy to open and close left handed. My biggest issue are frame locks, almost impossible to close left handed.There are lots of manufacturers who consider up portsiders:

It's why the only Spartan Harsey Folders I've owned are plain or solid DLC. My CRKs are lefty.When reviewing a frame lock, some YT guys will ding it if it doesn't have a reversible pocket clip. If I were left handed and bought a right handed frame lock that did have a reversible clip, I don't think I would want to mess up the show side with the clip.
