quickie...I can email/request a few knives in order I want but only request one knife be sold to me correct? As long as they're in order of which I want.

If you ONLY want one Knife please state that in your e-mail...then put your choices of what you prefer....like you might want #7 first choice #51 second choice ect ect....

if you want more than 1 state that also. Put the total you want and then the order of prefrence or total you are willing to spend
