Why do coffee drinkers like their coffee scorching hot? Seriously, I'm curious.

Couple of reasons for me personally, I imagine they carry over to others as well. When you get into specialty coffees like mochas you get the best flavor when it's really hot. The colder it gets the more bitter the flavor becomes.

In Starbucks you need to order it extra hot if you want an honest to god "hot cup of coffee". Their normal is a bit above warm.
