Let's see those higonokami style knives.

Talk me into, or out of one. Looking at the cheaper ones. Which steels should I look for, white or blue paper, SK layered steel? Any other tips?

For a first one, just pick the one you like best. If you decide you want more, start looking at the steels at that point. You know once you buy one, like any specialty knife, you'll want to do something a little different on the next one.

As far as I know, the only variation between the two is the color of the paper it's wrapped in.
 
Well.. they have different colored wrapping paper because they are different grade steels. Without getting into the percentages Aogami has more alloy than Shirogami and is considered a bit harder. But these are all high carbon steels, and really doesn't make all that much difference in use for a higonokami.

Wow... those are some really beautiful knives you guys have there. I really like the simplicity, elegance and quality of them. Plus, the Damascus versions are very appealing indeed.
