Lets see your best cutter...I'm talking high performance cutters....(Thin is IN!!!)

I reprofiled my m2 grip after beating up the original edge doing some construction work. I took it to 12 per side with 15 per side microbevel. After stropping with green rouge on leather the m2 gets really sharp.

Off Topic but how hard are the M2 full size grips to come across now days? I would really love to get my hands on some M2  and get my first Grip :D

So-Lo they show up occasionally on the bay and have been finishing in the $275 to $290 range nib. Ive got a brand new one in the safe but you can't have it.:D

As I get more and more into this knife hobby, I have found that yes I like the chase of finding knives, trying knives, and just plan ol' drooling, and making wish lists, trading and all the other fun stuff that can be had. BUT..... another, part of this hobby, maybe the most important part is sharpening. A dull knife is no fun! ;) As is a killer looking knife that can not cut.

I want to see your best cutter, be it a reprofiled Soddie, Mora, Case Peanut, Caly 3, Mili, Para,.. Leek....

You get my drift........... HIGH PERFORMANCE cutters.:D

Here is mine, Tom Krein regrind ZDP Caly 3, reprofiled on my EdgePro bottomed out........ buffed up to 7000 grit, no micro bevel yet. I am going to wait and see it it chips. I think the black marks on the Apex model are 10deg. Not sure if that ten per side, or ten total (5 per side.) My wife thinks I'm nutz for even wanting a knife this sharp. I can't explain it, its like wanting the fastest drag car on the track. :D

Lets see yours :D

So Lo , that looks like a heck of a slicer.

I think its 10 per side you should get a calliper (hope i spelled that correctly) to be sure.

;)
I also spotted a little nick in the blade approx 1 inch from the back.

Could you post a picture of the blade at a higher angle so we can see the actual cutting edge better?

I guess 5 degrees per side would be to much so the edge would start to roll or chip easily while cutting.

Mine at approx 12-15 per side are zero full flat ground by a pro. I think they have more mass behind the actual cutting edge. I wonder if it could be done on benchstones but i doubt it as you would thin out the backbevel & microbevel at the same time. A beltgrinder has more flex so you can get a narrower and steeper edge compared to a benchstone. What do you think?

Now get yourself some shaving foam and start shaving with it. lol

This is a tough question, since just about all my knives are great cutters.

But above all,I'd say my BRK&T Lil' Nessy is my best slicer/cutter

......I know my BM710 & 14205 are mad at me now:D

here is one that i didnt make but i did put it together. its an art summers recurve blade made from 440c. i'm not sure what angle i have on the blade but its a thin edge and extremely scarry sharp. it splits hairs easily too. jtr, i like that boker recurve . when it gets dull send it to me and i'll fix you up. i have just the ticket for dull recurves. the same goes for the half serrated one when it needs tuned up ;):D

I'm eyeballin that little nessy . These BRK&T look great. O boy another one on my list.

That Centofante 4 of yours looks like a shaving compadre:D.

I was quiet impressed with my CLB Subclaw off factory...

EnZo Camper 125 with the high Scandi grind works very well on wood.

Thanks,All of them were shaving sharp out of the box.The Lil' Nessy isn't that little either. It's got a 4" blade & feels great in the hand, also it was & still is the sharpest knife I have....I can't wait til' deer hunting season;)

I've got to find and get permission to post pics of louisianacook's Centofante 3. He ground the hollows flat and then polished up to at least 10,000 grit (waterstone grits - about the same as 2,500 grit wet/dry sandpaper). I got cut just looking at the photos (but they healed so cleanly that no visible scarring occurred).

Any pictures thom?:D I'm thinking about pickin up a Centofante 4 and sending it to the master Juergen Schanz for a zero full flat grind;)

Didn't contact him, but I went to his fototime site and they're no longer there (or I clicked the wrong album). There were only super-thin highly-polished Japanese-style cooking knives. Yeah, only that. ;)

So-Lo,I'm surprised you didn't post a pic of your S90V Millie. You did tell me it's the Ultimate slicer/cutter.

Darksiders????

That's a good one!

All praise due to Thomas Welk for that phrase. His company makes paring knives that would make excellent folding knives based on such criteria (0.02" thick at 0.25" behind the edge).

Its a great cutter, but you could say its like a prostreet drag car. Geared more for cutting but could be used harder. Prostreet cars, are geared for the strip, but can still take the ol' lady out for ice cream.

A Krein'ed Caly Jr, Caly3 ect. Is like a Top Fuel drag car, only made for one thing..... Going balls out fast. :D So, no prying at all, no twisting in a cut.. Or you will blow the edge out. Much like a top Fuel drag car can not take the ol' lady for a ice cream run. It would over heat, and the 1 gallon tank would not last a mile... And plus she would have no where to sit! :p

Hope that made a little sense? Can you tell I'm a gear head?? :D

Nice pics everybody  So looks like gunmikes chef's knife is the best cutter here? Anybody else want to step up and take the title from him? :D
