Iz Turley custom (my pattern). Before that, I used ESEE-3s for deer. For skinning and small game/birds I actually usually use an ESEE Izula II nowdays.

Ahh! Well that make sense. But I use mine to completely do the butchering most times. And I just breasted two mallard ducks with it last night.
Nice one! They are larger than most of our Southern whitetails by half again it appears. I am jealous of your hoist! Mine is not seen in this picture, but it is one of the larger of the five I butchered this fall and winter.

Over here we call Elk,Wapiti...They are primarily in Fiordland in the South Island..As with all our introduced deer species (reds,wapiti,whitetail,rusa,fallow,sika,samba and (moose?)...we have an open season and no permits are required...All deer are classed as vermin here and have been since the 1930,s.........FESThere may be some on a few exotic game ranches, but no free range established herds that I am aware of. Elk have in recent years been reestablished in small herds in the East, but I've never seen or hunted them when in season. Permits are very restrictive where hunting is allowed.
This is my favorite big game hunting knife. It is a good skinner, and works well for field dressing. It was one of the first ATS34 models that I was aware of.
