One of my chefs knives, cut to a pattern with a blade shape almost opposite of this end shape. It starts out as .214" 5160 HC spring steel which I've heard is a bit thick for this App., but i put a long fine distal taper on it. It is 12&7/16" long overall and 7&5/16 tip to wood, and weighs over 11OZ.. I hand forge the taper to the edge then finish grind, oil harden, temper to 475F. and usually polish them. This one i left in an easier to care for 180 grit matte finish, but i will polish it if you wish.. Carbon steel MUST be cared for and Will patina with use, so the Goncalo Alves scales are removable for cleaning or maintenance. They are also polished and oiled with a orange oil/beeswax combo. I have one of these guys. Don't hesitate to buy one. They are great knives especially for the money. Mine has been serving kitchen duty since I got it and is holding a great edge.
