LFF Chefs knife.

It is cut from .214" thick 5160 spring steel to a pattern with the blade almost exactly opposite of the end shape,then the taper to the edge is hand forged in and the displacement of the steel changes the profile to what we have here. It is then finish ground,oil hardened,tempered to 475F. and polished. I make it sound easy, eh? The scales are Goncalo Alves, polished and finished with an Orange oil/beeswax combo and are removable for cleaning or maintenance. It is 12&5/8"long overall and 6&7/8" tip to wood and weighs a little more than 12OZ., very substantial. I put a pretty high shine on my knives, but they are carbon steel and carbon steel must be cared for and will patina with use. I now offer Parkerizing free of charge, but I'm not sure about using it with food. Parkerizing is a corrosion preventing zinc phosphate coating in charcoal grey commonly used on military equipment. nice! never had a parkerized Chefs Knife! Of course since that is a cousin of the Mediterranean dagger, put a scabard on it and give 'em hell.
