Opinel. One that surprised me is the Case Slimline trapper, single blade, I think mine is plastic to look like jigged bone, and traditional looking. I consider it a gentleman's folder for Sunday service or out on the town.

Bradford Knives used to make a superb steak knife, the Gatsby. If you can find one, highly recommended.
 
When I go out to a restaurant there’s an Urban Trapper or a Case Slimline Trapper in my pocket.

While I’m a tradition knife guy at heart, if I were to be completely honest the former is a bit better suited for food-slicing tasks...for me at least. It is essentially a folding steak knife.
 
The Spyderco Stretch is hands down the sliciest knive i have ever owned. If its slicing your after get one! I absolutely guarantee you will not be sorry. There is also a straight spine version out that I also had to have. Very slick as well. Similar to a PM2 and Stretch off spring.
