I'm looking to get quotes on a custom made knife.
Steels I'm looking into are balanced steels like vanax and magnacut or even k390. Tough enough for tuff task but hard enough to hold and very shape edge.
I'd like some between a typical 8" chef knife and a 5" petty knife. Something in the range of
6.75 and 7.25 with a shorter belly than a chefs knife but a slight deeper than a petty. Good point for trimming out bone with a slight belly for rocking to finely dice.
I'm not sure if this is tge right place to do this but I'm over whelmed on the info and can't find anything I really want. Lol
