Looking for a good fixed blade hunter......

As far as my reasoning for staying with a stainless steel, I just think the ease of caring for a stainless knife is good to have. After a day of hunting and maybe field dressing a few deer and just wiping the knife off with a paper towel or rinsing it quick with water, I'd hate for him to forget it in his pickup when he got home and then find out it had rusted the next time he goes to use it.

I'm with you when it comes to non-coated stainless steel. I got a BRKT Bravo I and I have some problems with corrosion. But that's why I mentioned the coating that protects the blade. I "insist" on considering carbon steels because there are so many good knives that are made out of "rusting" steel (for example ESEE!!!!!!!!!).
Another thing I'd like to point out is that after a day of extensive use you need to take care of your knife anyway - doesn't matter if it's made out of 1095 or 154CM. I'm talking about maintaining the sharpness using a strop for example.
But if you are really looking for a stainless knife in S30V maybe the Doug Ritter Mk3 fits your bill. I never had the chance to examine one but it looks great, Benchmade provides high quality and I heard some good reviews about the knife. But it's expensive (I believe it's about 170$).
From what I heard Entrek make some nice knives as well - ok they are made out of 440C but I guess they know how to heat treat that stuff right.
After searching knifecenter.com I guess you are better off with a custom knife maker :). Maybe 200$ are sufficient.

Thanks for all the help everyone. I think I'll more than likely be ordering the Bark River Lite Hunter with cocobolo grips for him. I had actually considered a buck custom shop knife, but they only offer the 110 and the alpha hunter to customize and I didn't want to go with either of those. His birthday is in the middle of July, so I still have a bit of time to watch for a custom tho, but if one doesn't pop up I'm probably going to go with the Lite Hunter.

Jfive, we must have been typing at the same time because before I started typing your second post wasn't showing. I agree that after a day of hunting that a knife should be cleaned up and probably have the edge touched up. I also know he probably won't be doing that and I'm just going to tell him to come to me to sharpen it for him. I might also get him a ceramic steel to touch it up. Any suggestions there?

As far as the Esee knives go.......I think I'm going to be ordering one in the near future for myself and I wouldn't want him to have the same knife as me.......lol
 
I would recommend BRKT. If your not picky about handle material you can usually find the less popular models at seriously good prices here in the F/S forum. If I had a brother I'd find a nice looking BRKT with a 4" blade, have it engraved locally and give it to him. They really are heirloom quality. Your nephews and nieces could be using this knife after you and your brother are long gone.

I like to give knives as gifts, but quite often I find that the people I give knives to don't know how to sharpen or don't have anything to sharpen with. A nice Arkansas stone or EzLap might be a good idea in addition to the knife.

Given your budget, I definitely vote for a custom. Plenty of makers ca do SS for that money.
 
Bob Dozier makes excellent hunting knives. . .if you can find one. His wait is very, very long. A. G. Russell does carry them and often has some in stock, but perhaps not the one you want or in the configuration you want. Still, they are top notch.
