It's not just a different type of steel. The shape of the blade is different.
The Ritter Griptillian will be a better cutter. Towards the tip it is a full flat grind. Before that it is what I would call a high saber grind. Basically, when you need to put the whole blade through something the Ritter Griptillian will perform better.
I have both the 551 and the 552 (Ritter). I prefer the 552 for most tasks, but the 551 is a bit easier to bring to a very fine "biting" edge. The 552 will hold an edge longer.
