Looking for a knife with great ergonomics >$75

My GEC Bullnose is the most comfortable knife I own, 3in blade and 01 steel. Just keep in mind it's a slip joint, so I'd say take a look at sod buster type knives. Queen Cutlery has their Country Cousin which is slightly smaller and has a blade make out of D2. AG Russell has theirs made out 8cr13mov but also has superb fit & finish like the GEC. And I think GEC has something similar to the bullnose but a lockback I want to say but I'm not positive. Ka-Bar also puts out one of their dog's head knives which is a lockback of similar design with d2 blade.
 
I'm a stickler for comfort and feel-in-hand, so I went through several fixed blades before I finally settled on my Bushcrafter by Battle Horse Knives (BHK). It is an extremely comfortable knife. I use mine to perform all the tasks you mentioned, and it excels at each of them.

As for folding knives, I recommend the Cold Steel Recon 1. It's a big knife, but the feel-in-hand is absolutely outstanding. I love mine and carry it regularly.

Granted, no two hands are alike, so what works well in one hand might not work well in another. However, having said that, when you read the reviews on these two knives, most owners rave about the ergonomics, so apparently my hand isn't the only one that likes them.
 
Look up the avispa on knife works for the folder. It's an updated rat-1. For fixed blade, instead of the sog seal pup look at the field pup 2. Between both knives you should still be under $75.
If it's 75 a piece I would still get the avispa and use the leftover for the sog force.

S30V Spyderco manix 2 with g10 best ergos on a sub $100 knife . A bit heavy but the knife fit and finish is great you can't go wrong .

I have a Delica 4 in ZDP-189 and have to recommend the Endura which is also available in ZDP-189 on Amazon for about $90. I am a serious hobby sharpener with what may be the largest collection of Wicked Edge stones & glass film blocks. I also use a handheld microscope on every edge I work on and I can attest to ZDP's resistance to dings and chips. Spyderco has them hardened to RC-65, so they're hard to sharpen without diamond stones, but hold an edge better than any steel I've seen. I'll admit to limited experience since graduating to the microscope, but hard is always good. Especially with blades.

It is incredible! With the de assisted satin blade that is thin and quite lean behind the edge; it cuts and slices better than any other benchmade available . And I've owned and used many.
Second runner up: spyderco para military 2.
Those are my all time favorite production folders.
Fixed blade: Mora bushcraft black High carbon steel.
The most comfortable knife ever made I think!
