Looking for a new EDC, and I have a ton of questions

I like all the suggestions above. If looking at ZT consider the ZT0801. Based on what you had it seemed an all Ti frame lock needs to be in your pocket!

This is a fantastic option, also. My first truly high end folder, and still one of my favorites.
 
I think any one of the ZTs already mentioned would fit your needs/preferences. The 0562/0562cf, and the 0801 are great.
 
The ZT566 in Elmax would work for you and you're already thinking about it.

I'd suggest going for a small FB like a Bradford Guardian 3 in M390 or 3V. Great steel, easily carried horizontally, under your budget, and very capable. Your cutting chores seem more oriented toward a slicer and the G3 excels there.
 
One of my favorites is the ZT 0770CF. It's an assisted opener and a very nice size for edc. It is about the same size as a Delica.
 
BM940 gets my vote. It always kicks my other knives out of my pocket. The zt566 is way too heavy, i had one and tried my hardest to want to use it but it just didnt do it for me. For the weight the manix 2 is a way better knife in my opinion. Maybe sell a few of your knives you arent using and grab a hinderer xm18 ? That is the path you are heading down anyway......good luck with your search!

If you can find one a ZT0770CFM390 (ngk has 3.) I picked up one recently from kershawguy. My EDC is ZT0452. It is a good large thinish knife. It is great for my large hands.
 
There is a very good case to be made for the Benchmade 484. I would avoid anything with s90v if you want to learn to sharpen... Also imao everybody should own a basic 940!
 
One of my favorites is the Spyderco Manix 2. Love that it has a nice blade, but is light...discreet pocket clip, nice steel and very nice blade shape.
