Take a look at the QuietCarry Waypoint It’s the longest blade I own, hollow ground and rust proof making it perfect for kitchen work. Just run it under hot water to clean. Expensive (295) but far superior to my small Sebenza in every measurable way.I‘ve come to appreciate great slicers. I just sold off a large collection of high end knives getting ready to retirement and a mor frugal lifestyle. Can anyone recommend a knife that has 3.5”-4” blade, is supper slicey (hollow grind or thin blade/behind the edge) and that is under $100? I don’t care where it is made as long as it is good quality.
