Knife suppliers usually sell it in 5X1.5X1.125" blocks, but also in 5X10" sheets. Some suppliers carry it 1.5" thick. IF none of the knife suppliers have it, the industrial suppliers ( McMaster-Carr, etc.) will. Look under garrolite.
Some of the big blocks sold in he past were, IMO, a bit thin for a big bowie knife if you planned on doing any sculpting. FYI Texas Knifemakers Supply has a 12 x 5 x 1.25 slab of black linen listed on their website for $50. You can cut that a few different ways.
Yes 1 1/8 may be not thick enough. 1.25 should be good though. I have a problem opening Texas Kinfemakers Supply website. I do not know if its not working or is it just my laptop....)
