Look at Edible Wild Plants by Lee Allen Peterson in the Peterson Fiels Guides series. It covers "Eastern and Central North America".
ISBN 0-395-20445-3
It is well-organized with keys for identification and gives preparation and edibility instructions. Also, it mentions similar-looking poisonous plants side-by-side. Has very good detailed line drawings and several color photos. Could use more color photos however.
