I'm in the market for a new fillet knife. My Benchmade folder has been a good knife but I think a fillet knife is worth spending some money on because it gets used a lot, and when I need it I really need it to be good and sharp. I'm not quite ready to spend the money on something super expensive like the Bark River fillet knife but something in the $100 range is within my reach.
More specifically, I've really enjoyed all my knives that have convex edges and am hoping I can find a fillet knife with one. I realize I could just buy any knife and reprofile the edge but I don't really like doing that. I can sharpen a convex edge well enough but the couple times I've tried reprofiling an edge it didn't turn out as well as I hoped.
If I can't find one with a convex edge then the leaders so far seem to be the Knives of Alaska fillet knives. Any other suggestions?
