HL, the above list of requirements simply screams out the name George Tichbourne. My only reservation is that I believe George prefers to work in 440C and Stellite 6K. Still, it's definitely worth dropping him an email and seeing what he can do for you. As far as "soul" and "character" go, the last knife he made for me included gorgeous meteorite bolsters and mammoth ivory handles.
