HL, the above list of requirements simply screams out the name George Tichbourne. My only reservation is that I believe George prefers to work in 440C and Stellite 6K. Still, it's definitely worth dropping him an email and seeing what he can do for you. As far as "soul" and "character" go, the last knife he made for me included gorgeous meteorite bolsters and mammoth ivory handles. :)

Anyway the Shun knives are sold by a number of companies

Mete, "Shun" is a trademarked name of Kershaw Knives Kai USA. Shun kitchen knives are not made by many companies.

Rentz, just to clarify, there is a big performance difference between VG-1, and VG-10. Looks can be decieving sometimes.

Regardless the lady probably knows more about kitchens and their tools than all of us put together!
 
If you are looking for a good custom made kitchen knife, go with Tomes Knives.
