"House of Flying Daggers" has lots of knives, naturally. "Hero" does also. "Kill Bill" is full of blades. So is "Blade".

But I don't know if I'd buy movies. You'd have to watch the same movie fifteen times to break even for buying vs. renting...

"Under Seige" had an awesome knife fight at the end, with Steven Segal and Tommy Lee Jones. Kinda short, I don't know if it's worth buying the whole DVD, but it should be in the discount bin by now.

"The Fan" Robert DeNiro is a knife salesman with stress and an anger-management problem. The knives are Gerbers, but the film uses a made-up brand name.
