Looking for some info on belt grinder speeds.

First of all I'll start by saying I'm new to this forum and I apologize if I'm putting this post in the wrong category.

I'm in the process of building a 2x72 belt grinder and I'm almost done but I've ran into a bit of a snag. The motor I plan on using is rated for 3450 rpm(it's 3/4 HP), so my questions are; what rpm should I be aiming to achieve? Is there a formula to find out what size drive wheel and pulleys I need? Would I be able to use step pulleys with this motor? Likely 90% of the time I'll be grinding steel, with little bit of handle finishing, is step pulleys worthwhile?

If it helps, the drawings I'm going by for this build is based off the kmg type grinder.

I would be looking at ways to have variable speed. Different grit belts and speeds are going to generate heat and their is no one speed that works for everything.
