Grohmann's makes several knives that would satisfy all the requirements except the blade steel. They have been making knives in the traditional style (wood/leather) for ages and I like their rosewood handles and leather sheaths. Choice of either stainless or carbon steel. Personally I would go with the carbon steel over the generic "high carbon stainless" that they use but they need more care. Check out the #1 and #3 models, especially.
I am a knife dealer and I am trying to come up with the best production fixed blade to add to my line. The other aim is to add a knife to my users collection and give it a thorough test out before I decide to add it to the shop line.
