How bout an Opinel? My mom think mine are beutiful, and it wouldn't be snapping shut on her fingers. Just a thought, you might be looking to spend more.

Gave my mother (she wants a big tactical folder) a Gerber Shortcut

The Kershaw Chive is a great little knife to give away to sheeples, the speedsafe/linerlock flipper is the easiest mechanism.
The Rainbow version is a favorite with the ladies...

The Spyderco Cricket does have the "extremely cute" factor going for it ... so do a lot of Byrd knives.

I think FullMetalJacket's idea is a great one. :thumbup:

You might want to think about neck knives, too.
