Looking to "make" a knife on roadtrip

Morning all,
I am completely new to the knife making forums as very new to knife making in general. So far I have “made” 3 knives(very basic). They were RayWay knives(http://www.rayjardine.com/ray-way/Knife-Kit/index.htm), which are basically all in one kits that you glue together then carve the handles. (so it was pretty simple). I made these for the groomsman in my wedding who all seem to love em, and I really enjoyed making them.

I am doing a cross country road trip with my wife and dogs over the holidays, mostly just camping wherever we end up and I want to “make” another knife or two on the way. I am looking for maybe something a little more difficult than the rayways I have already made, anyone know of any other sites that sell “kits” or a site where I can get the basics. I basically just want to carve the handles on the road at camp at night so ill put the knife together at home first (that’s how I did the last set). But I am not looking to forge the blade(s) (not yet at least, live in apartment so that would be tough..) looking for a premade blade, then some handle material, preferably a full tang blade too.

Any Suggestions?
