Your question leaves to many questions for me to answer fully, but one thing I can say is that this type of restoration often leaves some evidence even if it is only slight. Kind of like touch-up paint on a car. If vinatge and mint are part of the equation you might want to leave well enough alone. If the knife has seen or will see use, you can try working some epoxy in with a needle and wipe off the excess epoxy with a towel barely dampened with vinegar once the epoxy has started to set a little.
