Recommendation? Lost, overloaded, need help

Nothing wrong with AEB-L. S35VN holds an edge longer, but both will work fine for a user like that. Use .060 ' - .070" stock.

AEB-L will run about $4 per blade, S35VN about $20 a blade.
 
I’d second the mention of 440c. It is a good affordable steel for the application.
