I'm a user, not a maker, BUT

I've got a ton of Black Bamboo in my yard, harvest about 20-30 staffs every year. Right now the largest diameter is about 1-1.5", but next years harvest will be 1.5-2"+. Seen a few knifes made with bamboo, so how are they stabilizing or preparing the bamboo for a life of service as a knife handle?

I'd live to send this stuff off to a maker and get a knife done, but want to know the feasibility.

That would be a little difficult. Bamboo boards like for lumber or flooring are basically a sort of super advanced chip board. Long strips of bamboo are cut and planed flat and glued together to form a solid board.

But you do have some options. You could send strips and basically steam them flat and make basically a stacked handle, akin to stacked birch bark or leather, or you could have very thin strips made and almost like a wire wrap handle.

There's a member here that goes by 2finger. He posts in the custom knives subforum who uses a lot of black bamboo.
It looks great in my opinion. You might want to hit him up and see if he'll give you some tips.
