Love my opinels

Hi all,

I just received a package (containing four knives) one of which is my (first ever) Opinel. WOW! The Opinel No. 8 (Stainless) Olivewood I received from FORTYTWOBLADES (Benjamin) is just beautiful! Of the knives I received : Svord (Orange) Mini Peasant, Becker BK 14 and TOPS BTK (Bird Trout Knife) the Opinel No. 8 is THE sharpest of them all. Make no mistake about it.....the other three knives are VERY sharp! However.....the Opinel No. 8 is just plain SCARY sharp! Wow! I have no doubt.....this will not be my last Opinel!

Deburred I got, but "apexed"?

An edge is just a meeting of two planes. Sideways, it looks like a triangle or if convexed, triangular with curved sides. The edge is the apex of the triangle and sharpness is how thin the very apex of the triangle is. I do define sharpness as different from cutting performance since cutting performance is affected by a lot more factors than just sharpness.

Now a well formed apex will make for a sharp knife and will be a big factor of cutting performance.

I hope that that explanation is comprehensible. I can't seem to write well enough. :o

You probably can't find a better hard use knife that retains excellent cutting ability for the money. And I agree, a lot of modern high tech knives that could never dream of the mixture of ruggedness and light saber precision, for one tenth of their price.
 
For those who have used both carbon and stainless opinels Are the stainless ones as sharp as the carbon ones? Or do they take a good edge with as much effort as the carbon ones?

If you have both which one do you like more carbon or stainless?

Opinels newer stainless is great. Is a little harder than the carbon and doesn't roll quite as much.

I used to use just the carbon ones, as I am old school mental like that. Then someone gifted me a stainless Opinel. Si I used it. Then I discovered that the stainless blades actually hold and edge better than the carbon steel Opinels. Now I'm a stainless Opinel fan, and they can keep the carbons ones. I gave all my carbon steel Opinels away.

But it was not always that way. Opinel used to use she no name French stainless steel, but around 2000 or 2001 or so, they switched to Sandvik 12C27 for the blades. There was a very notable improvement.
