Blade is Bohler M390 heat treated by Stack Met
4.5" Blade length
8.5" overall
.875" tall at the plunge
I designed this profile to be used for steak but it has worked well for many things around the kitchen, very universal tool.
Thin edge, .008" behind the sharpened blade, holding a very good edge.
Black Canvas handles with maroon liners, very subtle.
