Have you ever wondered what meat tastes like when it cuts like butter?
I made a limited run of M390 Gatsby Maroon Handle Knives that I intended to be used for Steak but has ended up being a great slicer in all respects.
It is 8.5" OAL with a 4.5" Blade length.
The Bohler M390 was heat treated to 60 Rc with a double temper. The blade were ground to thickness of .110" and bevel ground to edge thickness of .007 for perfect slicing. Blades are sharpened to hair shaving sharp
The blades have been tumbled to remove any grind lines and then highly polished to a near mirror finish.
The handles are beuatiful linen Maroon Micarta and are sanded and polished for a great fit and finish.
They really feel nice in the hand.
I wanted just the right handle feel, so after many, many attempts, I finally got the handle feel right for my medium sized hands.

Received mine yesterday and am very happy with it. A few of the things I check out when receiving a new knife..... Fit and finish are excellent. I'm always impressed when I can find absolutely no cracks or gaps in the construction - the polished maroon scales are comfortable, symmetrical, and flow nicely with the knife. The polished scale fasteners blend in perfectly. I really like the near mirror finish all about. Fits my hand well. The overall blade/knife shape seems very useful. The overall package implies a nice level of professionalism - from the makers name and material on the blade to the packaging and box with Brad's sticker and business cards. And last but certainly not least...just about the first thing I check when unwrapping a new blade is how sharp it is. I'm always thrilled when a blade will easily shave right out of the box (maybe that's why I'm 59 going on 12) and the bare spots on my arm are proof (I won't subject you to those images though). Anyway, as you can tell, I'm happy. Now if I can just manage to finish that apple without removing any of my finger tips. Thanks. Mike

 
Thank you for the incredible support fellow BF members, I was cleaning up the shop over the weekend and had enough maroon micarta to make 2 more Gatsby Maroons.
