I too liked the last one without the paw print. I don't think the paw print is really going to be as memorable as the name with Canada, since there are SO many different paw print symbols out there (maybe just where I'm from in California where we have the bear as the state animal and so many schools use bears or bruins, and locally we have the bulldogs and they use a pawprint. hell, my high school was the bears too).
The JK Wolff Canada on one side and a pawprint on the other would be really slick I think.

Got an email back from Ernie, damn that guy is fast!
Here is what he came up with
Font is a bit different, but I like this one a lot too. I took your advice unky and got them specced to 3/16 for small and 1/4 for large.
I think it's a winner... comments?

Ernie is a great guy to work with, I have been working on my stencil all week with his help. He is on the ball!
I have it finalized and on the way! Fairly in copperplate gothic, a simple all caps font.
