Really? I only chipped mine in my Endura when I tried to cut a mango pit in half. In my Yuna Mini Hard 2, I was trimming onion roots which still had quite a bit of dirt on it, and I swear the edge rolled. There was some micro-chipping as well, but nothing impressive. The chip in my Para2 in CTS-20CP is still there from when I nicked some metal. Now THAT one was impressive.I agree, those two steels would be great! Elmax takes an edge so nicely and easily for me; still have yet to try M390. I do think that a steel like ZDP-189 might be ill-suited for a hard-use knife after seeing so many cases of it chipping (you don't have to do something ridiculously stupid with a knife to make the blade chip) or even breaking. But most other steels should be plenty tough.
Honestly, I think ZDP would do fine on wood and cardboard. Certainly no worse than S90V, S110V, and CTS-20CP as far as toughness goes. I don't believe ZDP is a 1st generation PM steel given its unusual toughness at its hardness range.
Edge geometry and bevel would certainly play a big role in it as well, but I don't feel I would hesitate to take say, a Spyderco Moran in ZDP-189(one can dream) with me if I'm camping.
Still, not sure how fragile some steels really are. In most cases where I chip my knife, 99% of the time it's because the edge nicked something that shouldn't be cut with a knife(say, metal, glass, dirt, or concrete). I suppose in those cases a tougher knife would either roll or be blunted, which is certainly preferable to chipping as the damage is easier to repair.
