I've only used this a few times, mostly due to the fact that it's so sharp I had a really hard time cleaning it successfully WITHOUT cutting myself; this thing is SHARP, and stays that way. So I stored it away in safety for awhile, and I think it's time it got a proper home, maybe with a more confident kitchen dweller! The blade is 8 inches of a high speed tool steel, managing to still stay moderately flexible but strong for cleanly removing... well, anything on a spine, but I only used it on a fish. The blade comes down into a nice stainless steel bolster, sandwiches by two beautiful pieces of Maple burl and mosaic pins. The only notable nitpick is maybe the normal grinding marks, and if desired I can probably if not at least buff them out upon buyers request (if you REALLY want that shine). It's also worth mentioning at least for a filet knife its just a hair thicker than usual, so I'm not responsible if you go ham on trying to bend it 90 degrees. Asking price is $SOLD Paypal, shipping and fees included in total. Please message me with any questions!
