What is a Santoku ,you may ask ?
The word Santoku has Japanese historical significance meaning 'three virtues', and a Santoku knife wears its name quite proudly, with its marvelous chopping, dicing and mincing abilities. Typically, they range in sizes from 5" to 7" in blade lengths, but smaller ones are available. Sporting a unique styling somewhat like a narrow-bladed cleaver, the Santoku knife is designed for a comfortable, well-balanced grip, while allowing for full blade use.
I find these very good for cutting cooked & uncooked meats,too,slicing ,cubing,etc. While I have not tested this yet,I feel these would be great for filleting very large fish,too.

This is a brand new design ,and new style of knife by Rick. It comes with a saddle leather scabbard by Larry Parsons. It is 10" OAL,has a 5.25" blade,with 4-7/8" of cutting edge. Full tang is tapered,handle is fully contoured.Thin red liners,ss pins& tube . 3/16" stock 154 CM ss blade stock is deeply hollow ground,a wicked slicer edge.Fantastic cut swedges. Feels great in hand,fully sculpted handle,very useful,kitchen,camp,hunting,fishing & meat processing.
