Micarta roughness.

Not sure if this is the right forum but here goes.
I am looking to get a fixed blade with Micarta scales. And I would like to have a rougher texture to the scales. I've seen three different types of micarta - Canvas, Linen and Burlap. Does one type of the three have a rougher texture? Or does it not matter.
Sounds like the Burlap would be the roughest, then canvas then linen.

Yep, then "paper Micarta" The maker should be able to refine the texture as you like on the finished handle.
 
Keep in mind, often the "look" of the finished handle will be different when finished with more grip. Burlap and canvas micartas have the most depth of pattern in them as you have surmised, but in order to keep some texture/grippiness there, the micarta is generally not finished to as high a grit.

What I suggest you do is find a maker who has access to a bead blaster, and then have the scales lightly blasted. This can help bring out the texture of the underlying fabric in the micarta a bit, and it gives a more uniform appearance.
