Micarta vs G-10

I have used my RC-3 a lot for food prep, I have never noticed a smell, but my linen micarta handles are a lot darker than they were when I first got it. I assume that is normal?

The first thing I did when I bought my RC knives (with micarta handles) is spray them with silicone spray (Wmart $1.90) . I figured it would act like Scotchguard, and so far it works. Every chance I get I wipe it down with my silicone cloth that I use for my guns. The only thing is the silicone spray darkened the handles to almost a black color, which looks fine to me. Its not slippery either.
