With the mouse pad or say a soft relatively thick piece of leather, isn't there a higher risk of rounding the edge off due to too much give? I have read that some people like using thin leather, no more than 1mm to avoid rounding.

Exactly. I'd start with the sticky and then try one knife until I got a bit of experience. Lighter and shallower is the place to start. KSF also has a good video on convex sharpening with strops on their web site. It's worth a few minutes to see it 4 times.
