Personally I would recommend that 5 or 6 inches is more than enough. ESEE is coming with 440C stainless versions. ESEE 6 stainless would be ideal I think. They have awesome sheaths and no-questions-asked exchangeable life-time warranty. Otherwise Entrek USA Elk or Survivor. If you don't mind buying an after market sheath I would look into Bark River's Bravo series in S35VN or 3V or Fällkniven S1 or A1 black coated.

Either the CS srk or the recon tanto. Both are suitable knives for combat and utility tasks and are just great knives.
