Mineral oil is pretty thick. You would probably happier with something as simple as gun oil or 3 in 1. In fact I would use something like that to rinse out the mineral oil. Use the mineral oil on your cutting boards. Folding knives are not food safe by definition. Not recommended for cutting food.
