Does anyone know what knife Ming Tsai is using on his show Simply Ming? It looks like a cross between a nessmuk, cleaver and santoku.

I tried doing some research and came up with the kentai four in one, http://www.tristarproductsinc.com/products/kentai.html , and it is super close but not quite right.

The knife Ming uses does't have the black dots on the handle, but the blade shape is the same. The knife I am inquiring about looks like it would be made by Global but I can't find it in their line.

I know he is a big user of Kyocera ceramic knives but this does not appear to be one of those.

It was that knife, but maybe a different production run. There's a reason he keeps switching knives. He gets paid to. Those aren't the knives he would use in a real kitchen.
