Yeah, this has been a typical misunderstanding. We are prejudiced in this forum..all about the edges :p

Very true;).

Nobody seems all that interested in mirror polished blades given the potential benefits(stain resistance, smoother cuts) of having a smooth surface in which water beads up and slides off of like it was glass.

Makes me wonder if I can't get a side-job in mirror polishing knives.
