I use in my polishing work the Microfinish belt from 3M and the green chrome rouge for polish steel blades in 440-C, my polishing are in a scratchless estate, but I want to know more tips for turn better that polishing, how I can do it? I see on the book "How To Make Folding Knives" the using of the MEK (Metil-etil-ketone) by Wayne Clay. This product serves for make a blade polishing better?

MEK is a solvent/cleaner used to remove the grease and oils from buffing and machining operations. It doesn't have any effects on achieving the polish that I'm aware of. I also understand that it is falling out of use with many shops because of possible health concerns.

As for your polishing, it sounds like you have a good formula going already. Green Chrome is definitely a fine way to finish up, though I use a few more abrasive, grey compounds of different compositions between this and the belts (usually stopping at 600 grit).
