I probably won't be spending that much on a kitchen knife, but like the idea, going to the ideal range for the materials.
Price depends on many factors such as where it is made, but the base cost would be low considering the cost of the steel and the ease at which it can be worked. Those steels are actually very inexpensive in all regards, it would be expected for prices to come down when they are used in knives, though of course it is hard to sell an upgrade which is cheaper.
