I am new to the forum and trying to figure out the easiest folders to modify or should I say the most popular to modify? Thanks for any replies

What sort of modifications are you looking to do? And are you actively modifying it yourself or are you just looking to purchase aftermarket products for it?

Opinels are very popular when it comes to modifying. It helps that they're really cheap. You can acid wash the blade, regrind the blade into different shapes (like a wharncliffe), stain the handle, change the shape of the handle, etc. Here's one example:

I would like to modify with after market parts. I have modified 2 Benchmade mine grips with new scales from applied weapons technology but would like a nice knife with micharta scales

I like to modify Cold Steel folders. They tend to have bigger, thicker scales that you can cut and sand down, and the same goes for the blades. They are also cheap enough to toss if you screw up, though now that they have moved up in steel it's not as true. Just keep the metal water-cooled while you work, and wear a good respirator if you do sanding on G10. Those cheap filter masks are for dust and wood, not synthetics, and your lungs will hate you.

Agree on this, Opinels are great to sink your modding teeth into as they're dirt cheap and there's a nice variety of things you can do with them.
