I think they called it that because of the SC shield shape, and it was meant to evoke nostalgia. The half Moon Pie was one blade instead of two.
Question is Vanilla, Banana or Chocolate on the Moon Pie?

I think he meant "CS"- as in "Canal Street". The Moon Pie Trapper is one of their models.The Canal Street shield is a big circle, like a Moon Pie. A rather unattractive shield, I might add. The knives are otherwise quite nice.
I understood that it was called the "Moonpie" because the back bolster is larger than any standard Trapper bolster.
