Victorinox makes a good inexpensive knife. And they do have a locking folder option.

I will second that (i have 50ish Vics!).
For two layers A good old Spartan, Recruit, Compact or Alox Soldier or Cadet series.
If you want three or more layers try an Alox Farmer or a Huntsman.
You can get great prices on used vics on ebay.
Its not problem to get a Hunstman for 10$ or so.
The Vic locking blades will run you at least 20+ dollars though.
The Rucksack, Outrider and OH Trekker are great knives!

Well I just ordered an Opinel #10 with a 3 3/4 inch blade from Lee Valley. Of course I also bought a Gransfors axe stone and a strop set....

So, we'll see how it goes. I really enjoyed researching all these other knives though. I may have to start a collection...
