Sorry for embarrassing you Sarah! Although I did want to make sure everyone knew about your incredible gesture.
I do love the knives, they are fabulous! Although I must say, the secondary bevels really weren't to my taste from the factory (very obtuse angle and a thin grind). I touched the ebony-handled one up on my stones and got them to my liking, I will admit I've been hesitant to do the same to the bone handled one because I'm afraid of mucking it up :redface:
