Any folder made by Grant and Gavin Hawk. I haven't played with the customs yet, but both the RAM and MUDD are habit forming and just offer the most sensual experience, from the feeling of the knife, to feeling the lock engage and disengage to the loud thwack.
 
Anything with an AXIS lock that I have handled and my Nitrous Stryker.

Got a Subrosa and Para 2 in the mail and I imagine those will join the group. But we will see.
 
Another vote for the Kershaw Volt and AG Russell Acies.
