Most stainless steel?

Spyderco has many knives that will suit your needs. Buy the Salt if you just want a zero maintenance knife, but if you're willing to just wipe it down each day with an oily rag, you can get a better steel. VG-10 has a very good reputation for being corrosion resistant, but no steel is completely impervious to corrosion (except the Salt). Most of us here take care of our knives, so we concentrate on edge retention or toughness. If you coat a good steel with BreakFree CLP, you can carry it for a long time with no rust problems. Personally I'd opt for that.

The Spyderco Salt has an "okay" edge retention, but VG-10 or S30V are your premium steels and though I'm not willing to pay the extra money for these steels (I like AUS8-- it's easy to sharpen, but it doesn't have great corrosion resistance). Whatever the steel, though, I wipe them down at the end of the day with an old tee shirt.
 
I'm still kinda shocked that the notion H1 isnt steel is still out there. I'm not even getting into the work hardening part.
 
I'd carry no different knife than ever and just accept the rust spots. The nice weather won't even last this week so how badly could your knife corrode?
LMAO. Someone who's familiar with Dutch weather, I see! :D But I'm also going on holidays to an actual sunny country!

But guys, I failed to make myself clear: H1 is not an option because no folders are made with it that I like. X15 is news to me, I have a standard Grip (440C) and would consider a new steel.
I did not know that 440C has such a good rep with regard to corrosion resistance, I do know (from experience) VG-1 is pretty good.

If you like your standard Griptilian you'll be happy with the X15 version. The edge retention will be as good or maybe a bit better in addition to being rust-proof. If it were me, I'd spring for a custom Grip in N680 with my name done up in fancy lettering.

In that case, 440 c will do just fine. Make sure to wash it with clean water if you get sea water on it and it'll remain spotless.
